We are seeking capable and experienced professionals to join The Hotel Britomart in the position of a Chef de Partie. You will thrive on immersing yourself in the brand and hotel operation and be proud to be part of The Hotel Britomart team. Reporting to the Executive Chef, you will be responsible to provide exceptional guest experiences by embracing The Hotel Britomart philosophy. Be responsible for the restaurant and events in the absence of the Head Chef or Sous Chef. Manage the kitchen/a section of the kitchen, ensuring that all food standards, preparation, presentation, and cooking techniques are carried out according to recipes and departmental policies and procedures. Maintain strict hygiene and safety procedures.
Duties and Responsibilities include:
Food Preparation & Presentation
- Prepare, cook, and present high-quality dishes in line with hotel standards and hygiene regulations.
- Maintain mise en place and ensure efficient shift transitions.
- Ensure consistency in recipe execution and portion control to minimize wastage.
- Organise and manage your assigned section, ensuring cleanliness and productivity.
- Monitor food storage, hygiene standards, and equipment cleanliness in line with HACCP and council regulations.
- Assist with stock control and inventory management.
- Supervise junior chefs and kitchen hands, providing guidance, training, and support.
- Set a professional example through grooming, punctuality, and attitude.
- Participate in ongoing training and contribute to team meetings and initiatives.
- Work closely with the F&B team to ensure menu accuracy and guest satisfaction.
- Respond to guest feedback and assist in resolving any food-related complaints.
- Maintain clear communication across departments and support other events as required.
- Adhere to workplace safety policies, emergency procedures, and hotel security protocols.
- Report hazards, incidents, and ensure guest privacy and team safety at all times.
More About You
- A food handler’s certificate/food safety certificate.
- Possess appropriate Industry Trade Qualification or completion of Commercial Cookery qualification.
- You can work independently but you also acknowledge that your work is a key part of the team that delivers memorable moments.
- Minimum 3-4 years’ experience within a similar position of similar size and scope.
- Effective communication skills, both written and verbal.
- Works under pressure without negative impact.
- Demonstrates hygienic work practices.
- Proven understanding of the hospitality/tourism industry.
